Fall is my absolute favorite time of year. The weather is amazing and the food is super comforting. Could you think of anything better than a hot bowl of yummy chili on a cold night?? How about making that pot of chili for under $15 (maybe $10 if you use coupons)? Do I have your attention now? That’s right, we are going to make a tasty dinner in under 30 minutes and it won’t break your wallet. For all of us busy moms, that’s one big gold star for us.
May I present…. Spicy White Chicken Chili (or Soup, if you make it thinner)

Ingredients:
1 Pre-made whole rotisserie chicken –shredded (you can make your own, but this is just so much faster and you can probably get one from your local grocery deli for about 6 bucks)
4 – 6 cups of chicken or vegetable broth (I like the low sodium because the chicken has enough salt in it for both)
1 whole onion – diced
2-3 Jalapeños – diced (If you like really spicy, don’t discard the seeds, I like it mild, so in the garbage they go)
1 Poblano pepper – diced (If you can’t find Poblano, its ok… this tastes perfectly fine with just the jalapeño)
2 cans of drained white beans (you can either do Northern beans or Cannellini - I prefer Northern )
12-16 oz jar of Salsa verde
2 tsp of Chili powder
2 tsp poultry seasoning
4-5 cloves of grated garlic (you can mince it but it’s easier to us a small grater and the flavor is more intense)
2 tbsp. of olive oil
3 tbsp. of Fresh chopped cilantro (if you can’t find fresh, freeze dried will do)
Garnish suggestions: (Use a few or all… the choice is yoursJ)
Extra chopped jalapeño
Sour cream
Finely Shredded cheddar cheese
Diced green onion
Cilantro
Tortilla strips
Directions:
Shred your chicken making sure to leave out all skin and bones... then set aside
Heat diced onions, peppers and garlic in a pot in olive oil until onions are translucent and garlic is fragrant
When onions are cooked, add the remainder of ingredients (except the garnish of course). Stir all together and bring to a boil. Cover the pot and simmer for about 15- 20 minutes stirring occasionally. At this point you can season it with some salt and pepper or additional chili powder if needed…. All up to your taste buds
When the chili / soup is to your liking, you are done. Serve up a nice hot bowl with any garnishments you like.
